A Lacrima-based rosé sparkling wine? It’s possible: at Filodivino we like to explore all the facets of this rare and unique grape. In the pink version it maintains its aroma and gains in freshness.
Sparkling process: in 30 hl autoclave for 6 months (long Charmat).
Dosage: 3 grams per liter.
Winemaking: static decantation of the musts for one day, tapping of the clear must and inoculation with selected yeasts for fermentation at a controlled temperature in steel tanks.
Area of origin: San Marcello and Ostra.
Vineyard age: average age 10 years.
Soil: Calcareous clays.
Plant density: 3500 plants per hectare.
Training system: Guyot pruning.
Yield per hectare: 50 quintals per hectare
Harvest: By hand, slightly earlier.
Aging: 6 months in steel tanks on its own yeasts.
