Category: D.O.C.G – Denomination of guaranteed controlled origin.

Winemaking: Fermentation in stainless steel tanks at a controlled temperature. 90% ages in steel and 10% in French oak tonneaux for 12 months.

Origin: Old vineyard of San Marcello, in the heart of the Verdicchio dei Castelli di Jesi area.

Age of the vines: 55 years

Soil: Calcareous clays

Plant density: 2700 plants per hectare

Training system: Guyot pruning

Yield per hectare: 50 quintals per hectare

Harvest: By hand

Aging: 90% in steel and 10% in French oak tonneaux for 12 months. Then 12 months in the bottle.

Grapes: 100% Verdicchio

Taste: On the palate it is warm and round while maintaining the minerality typical of our area. Wide in the mouth, a beautiful acidity supports and refreshes it.

Color: Intense yellow with gold shades.

Aroma: Ripe aromas of beeswax, spices and candied fruit combine with fresher and more vibrant notes.

Pairings: Perfect with elaborate fish dishes, such as broths and soups, grilled and roasted turbot and sea bass. It also goes well with white meats, in particular with simmered rabbit and chicken, one of the typical recipes of the Ancona hinterland.
