Winemaking: Slightly early harvest of our younger vines. First fermentation in steel and second fermentation in the bottle after adding must. The wine is not filtered and may have a slight turbidity.

Origin: Sparkling interpretation of the territory of San Marcello, in the heart of the Verdicchio dei Castelli di Jesi area.

Age of the vines: 8 years

Soil: Calcareous clays

Plant density: 2700 plants per hectare

Training system: Guyot pruning.

Yield per hectare: 50 quintals per hectare

Harvest: By hand in late August and early September

Aging: 3 months in stainless-steel tanks and 3 months in bottle on its own yeasts after adding the must.

Grapes: 100% Verdicchio

Taste: Full, citrusy taste, with hints of apple and yeast. Resting in the glass it opens up to the typical nuances of Verdicchio.

Color: Intense yellow color. With slight haze due to the presence of yeasts.

Bouquet: The nose is rich and multi-layered, with aromas of citrus peel, camphor, mimosa and medlar.

Pairings: To drink alone, bathed in the sun or under a sun-umbrella. However, it is a versatile and very mineral wine, it goes very well with raw or lightly seared prawns, fish carpaccio, salads and fresh cheeses.
