Matto is the first wine we presented to the public, at the beginning of Filodivino’s adventure. Even today it represents our desire to offer an original and high-quality interpretation of this incredible Appellation.

Category: D.O.C. – Designation of origin.

Winemaking: Selection of parcels mostly composed of 55-year-old vines. Manual harvesting and fermentation in stainless-steel tanks and non-vitrified concrete eggs. It is bottled after at least six months of aging.

Origin: San Marcello organic vineyard, in the heart of the Verdicchio dei Castelli di Jesi area.

Age of the vines: 10 to 55 years

Soil: Calcareous clays

Plant density: 2700 plants per hectare

Training system: Guyot

Yield per hectare: 50 quintals per hectare

Harvest: By hand

Aging: 90% in steel and 10% in concrete for 6 months, 6 months in the bottle

Grapes: 100% Verdicchio

Taste: The sip is full-bodied, supported by a nice acidic shoulder and excellent persistence. Pleasantly mineral closure.

Color: Straw yellow color, sometimes with subtle green shades that turn golden with aging.

Bouquet: The nose initially reveals hints of white flowers, followed by a sensation of citrusy freshness, savory and with an intriguing complexity.

Pairings: Fish-based dishes, white meats, appetizers and first courses. It goes perfectly with seafood cuisine, and it is excellent with “spaghetti allo scoglio”.
